These sausage muffins are delicious! You can buy already ground pork…but why not make your own? Your food processor will do an amazing job and you will have sausage patties with your own, wholesome ingredients in no time! DIRECTIONS FOLLOW:

To Make your own seasoned sausage cut a one pound pork roast into 1/2-inch slices; and then into 1/2-inch cubes. (It is best if the pork is still partially frozen: gives the processor blades something to “bite”.) Pulse 1/2 to 2/3 cup of pork cubes at a time. This way you will not stress the motor. 1 to 2 tablespoons finely minced garlic, or to taste (I like a lot of garlic)
1 tablespoon brown sugar or maple syrup
1/2 to 3/4 teaspoon salt
1/2 teaspoon fresh, cracked black pepper
1/2 teaspoon dried thyme
1/2 teaspoon dried, crushed rosemary
1/2 teaspoon EACH onion and garlic powders
1/2 teaspoon red pepper flakes
1/2 teaspoon fennel seeds
With gloved hands, mix the ingredients well to evenly distribute all the seasonings. Form mixture into patties and wrap and freeze. Or cover and chill for several hours to allow the flavor to develop. Makes about 7 to 8 sausage patties.
